You don’t have to use beef brisket! The best side dish in my house: Braised Beef and Quail Eggs in Soy Sauce
You guys like Braised Beef in Soy Sauce, right?
This time, I brought a recipe for ‘Braised Beef and Quail Eggs in Soy Sauce’
that can be made without using beef brisket!
Let's make 'Braised Beef and Quail Eggs in Soy Sauce' together,
which has a unique texture and is really delicious when mixed with white rice!
[Ingredient]
4 cups (720g) of distilled water
1 packet (500g) of peeled quail eggs
Approx. 2 cups (200g) of beef (thinly sliced ribeye or sirloin)
Approx. 2/3 cup (150g) of dark soy sauce
Approx. 2/3 stalk (80g) of green onion
Approx. 1/2 cup (72g) of brown sugar
Approx. 1/3 cup (60g) of cooking wine
Approx. 1/2 cup (60g) of whole garlic
2 (20g) cheongyang pepper
[Instructions]
1. Slice the beef into bite-sized pieces, about 4cm thick.
* Rinse the beef in water to drain the blood if using old meat.
2. Remove the edges of the whole garlic and slice in half if the size is too big.
* When using minced garlic, the soup may turn out slightly cloudy, so drain the chunks using a strainer after brewing the broth.
3. Chop the cheongyang pepper and green onions into 1cm thickness.
4. Rinse the peeled quail eggs and remove excess water.
5. Pour water, dark soy sauce, brown sugar, cooking wine, and beef into a pot of a deep frying pan, mix them well, and boil over high heat.
6. Once the broth comes to a boil, remove the foam, then boil for another 2 minutes.
7. Add the prepared cheongyang peppers, green onions, garlic, and quail eggs, lower the heat to medium, and cook for another 4 minutes until it's ready.
* If you prefer a darker color, add caramel coloring or Chinese dark soy sauce.
* When using artificial seasoning, refrain from using beef dashida (beef stock) as it can get too salty.
* If the meat is too thick and the texture is tough, lower the heat and cook for over 5 minutes according to preference.
* When the water has evaporated from boiling too long, feel free to add more water if needed.
