I was at the big box club today, making dinner plans as I shopped. I saw cut beef ribs, then found your recipe, and put them back and bought beef racks. Nice job on the membrane...I use worcestershire as a binder...and also in the spray bottle 50-50. Oak and a bit of Pecan for me. Costco had some thicker ones..a charitable butcher I guess. Good work.

I literally watched this after a Malcom Reed video... I'm sorry but I have to say yours does look a bit dry...his method was to use foil and bathe with some beef broth vs the butcher paper. Hey I'm loving your recipes especially the Jalapeno Dr. Pepper jerky. I'm gonna try a halfway between yours and Malcolm's and see what I end up with.

It's probably because she didn't spray them to add moisture which I believe you should. If you spray them with apple cider vinegar or bef stock you can avoid this.

LOVE, LOVE, LOVE, LOVE your app and channel!!! Don’t want to take up too much of your time!! I have 2 quick questions. Do you think that it is absolutely necessary to peel off the membrane from the underside of the beef back ribs?? Could you do a video of smoking in an offset smoker?? Not everyone has a smoker like you showcase in your videos. A lot of us “backyard bbq dad’s” just have the offset grill/smoker. Just a thought, again you are a great chef, please keep doing what you’re doing!!!! Thank you

I was trying to find a video where someone removes the membrane. My group is 50/50 versus or against but I'm trying my first set of ribs without the membrane. One guy also told me to trim as much fat as possible from the top even if it sounds counterintuitive

We clean them after every cook on our smokers. This Camp Chef stays pretty much spotless for filming duty, while our workhorse grills are a little less clean.

The butcher paper is a must. It soaks up all that extra grease. I used to use aluminum foil but it just swims in all that fat. I’ve never cared for beef ribs because of all that grease. Now I do…..

Using a weber kettle or aussie type grill use Indirect heat with hickory wood chunks until 190° for 45 minutes, then wrapped in butcher paper for another 40 minutes or until 209°. Never has this method failed me.

Just a thought... In between cook-time, take a very sharp "cleaver" and hit those bones down the middle exposing the bone marrow. Cook until done. It's amazing! Like the wolf's say, "Don't waste a thang, fang"! LoL You can not get flavor like that anywhere and is all natural!

It's kinda hard to find good beef ribs at local stores. Make friends with a neighborhood butcher or look to some online butchers to get higher quality racks!

Did I miss it or did you ever even mention the temp of the smoker? From watching, it could have been anywhere from a cold smoke to over 500 degrees which makes the times irrelevant. Why even mention the times if the temp is unknown?
