[Ingredients]
[For the dough]
- 700g (~5 2/3 cups) White Flour (All-Purpose or Bread works fine)
- 300g (~2 1/2 cups) Wheat Flour
- 670g (~2 3/4 cups) Room Temperature water
- 40g (3 tbsp) Sugar
- 10g (3 tsp) Yeast
- 30g (2 tbsp) Salt
- 40g (3 tbsp) Olive Oil
[For the Za’atar Mixture]
- 2 tbsp Za’atar
- 2 tbsp Olive Oil
[Steps]
[The Autolyse]
1. Gradually mix all the flour with 2 1/2 cups of water. Save the other 1/4 cup of water for later.
2. Lightly mix it unitl no flour is left on the bowl. Cover and let sit for 30 minutes to an hour.
[Mixing the dough]
1. Create a slurry with the water, yeast, and sugar. Add to dough and mix until fully incorporated.
2. Create a slurry with the water and salt. Add to dough and mix until fully incorporated.
3. Add olive oil to dough. Add to dough and knead until fully incorporated.
4. Knead an additional 5 minutes until dough is strong and supple.
5. Cover and let dough rest for up to 2 hours.
[Making the Za’atar Mixture]
1. Mix 2 Tbsp Olive Oil and 2 Tbsp Za’atar. Adjust until desired consistency is achieved.
[Making the Dough Balls]
1. Cut into 2 oz dough balls
2. Cover and let rise for up to 2 hours
3. Flatten and stretch dough balls to your desired size
[Cast Iron Method]
1. Heat pan to medium-high heat
2. Oil the pan and place dough onto skillet
3. When bottom is slightly cooked flip and cook the other side
4. Flip again and top with za’atar and olive oil mixture.
5. Cook until bottom is crispy.
[Oven Method]
1. Pre-heat oven to 450F.
2. Stretch dough and top with za’atar mix and let rest.
3. Place in a pan and bake for 5 minutes.
