菠菜小餃子(食谱)
材料
2碗 小麥澱粉
2份 1 1/4 碗 木薯粉
4碗 清水
馅料
800克 沙葛
150克 菠菜
2片 黑木耳
1小段 紅蘿蔔
調味料
香油
少許 胡椒粉
素味蠔油
少許 鹽
西螺醬油
2小匙 糖
1/4 小蘇打粉
首先将餡料洗淨切成絲備用,把3湯匙油倒入鍋裡倒入黑木耳炒香後加入沙葛和紅蘿蔔絲
再一次炒香,加入少許黑醬油和菠菜梗先嘗試如不夠鹹加入少許生抽再次炒香倒入少許麻
油提味炒均勻備用,用200毫升的水把菠菜煮軟後取出冷後倒入攪拌機裡再倒入半杯水和
倒1/4 小蘇打粉一起攪拌保持菠菜翠綠,攪拌後取出菠菜汁液V過濾備用,將兩份
粉漿材料各分開一半混合攪拌均勻,一份是白色粉漿一份是加入菠菜汁液的粉漿
備用,煮粉漿之前將食用油,水和鹽倒入鍋裡燒開將2份粉漿分別兩次倒入鍋裡
煮至濃稠狀,粉糰煮好後取出蓋上保鮮膜靜止20分鐘,20分鐘後將粉糰各分2
份,撒上木薯粉將白色和綠色粉糰疊在一起擀平卷成長條狀,把粉糰各分30克擀
成圓形將餡料包入,水燒開後中火蒸上8分鐘就可以了,謝謝
