maltose - 麦芽糖 was very common childhood sweet treats in many asian countries. most in the west have no idea. when i was growing up in hong kong it was one of my childhood favorite sold by street vendors. real 麦芽糖 is delicious with the right consistency and is not as sweet as most other candy. these days the 麦芽糖 found in asian grocery stores from China seems to be not real 麦芽糖 but made from cane or corn sugar. the dead giveaway is the over the top sweetness. the sweetness of real 麦芽糖 is much milder and has a subtle flavor that is not found in cane or corn sugar. while 麦芽糖 is translated as maltose, i don't think they are the same base on how 麦芽糖 is made in this video which involves the use of glutenous rice. maltose is used in beer making in the west. love this video as making 麦芽糖 is a dying art due to labor-intensiveness.
