A quick translation: Sweet and Sour Pork Ribs 1. Wash ribs 2. Blanch in water with spring onions and ginger slices and some chinese cooking wine 3. Remove from water and wash clean 4. Prepare a sauce with 3 spoonfuls white sugar, 4 spoonfuls mature vinegar (陈醋), 2 spoonfuls light soy sauce, a little salt. Mix. 5. Prepare spring onions, garlic and sliced ginger. 6. Fry blanched ribs in a lightly oiled wok. Remove from wok. 7. Add half a bowl of water to the wok. 8. Add rock sugar to the water (amount not specified) 9. When caramel starts to colour, reduce heat to low and cook slowly until red 10. Return pork ribs to the wok and stir until well coated with the caramel 11. Add spring onions, ginger and garlic and stir fry till fragrant 12. Add sugar and vinegar mixture to the pan 13. Add water 14. Add 2 star anise, broken into pieces 15. Cook over low-medium heat for 40 minutes 16. After 40 mins, increase the heat to reduce the liquid 17. Add a little more mature vinegar to the wok 18. Sprinkle with some sesame seeds before serving

I cooked a braised pork ribs for dinner. I nearly copied this cooker who instructed us how to cook this delicious dish in the above video. At first, I chopped the pork rib into pieces. And then cleaned up the pork ribs in the water multiple times, dropped water, and dryer them. Next, I poured some cooking wine and sprayed a little pepper powder onto the pork ribs for getting rid of the meat smell. Next, I added half a pot of water and placed those ribs into the water, boiled them for a few minutes, scooped them, and drained them well. It is a little complicated dish. In the past, it was a real big meal served on some formal and important occasions. such as, Chinese New Year, Wedding Ceremony, friends gathering, etc. let me go on next. I placed a little oil into a pan and added some sugar to stir sugar until the color turns into brown color. And then I quickly added the dried pork ribs into the pan to stir them a little so that they mixed well with low-medium heat. Next, I started seasoning. I added some green onion, ginger pieces. I went on frying and stirring them for a better mix until you could smell the fragrance in the air. finally, I added much water which could flood those ribs. And I dropped some soybean sauce and a little salt which were boiled with high heat for a few minutes and then turned the heat into low to boil for 40 minutes. before severed, to adjust the heat for a little left. the second dish is only to fry Chinese green bean sprout on the high pan for a few minutes. the whole step is with high heat.
