Wash the liver well under running water, cut into rectangular pieces 1 cm thick and 5-6 cm long. Now pour milk over it and leave for 2 hours.
Drain the milk, salt and pepper the liver, mix well.
Cut the abdominal fat into small squares, place pieces of liver on them and wrap, securing with a toothpick.
Heat a skillet and place all the prepared pieces. Fry until golden brown on both sides for 2-3 minutes each. Cover with a lid and simmer for about 10 minutes until the liver is cooked.
Serve the dish zhauzhurek with cilantro and boiled potatoes.
The dish is very simple, cooks very quickly, and of course, turns out very tasty! Zhauzhurek can also be cooked on a grill.
According to tradition, the appetizer with a sacred meaning was prepared by a mother for her son who was setting off on a long journey.
Through the dish, she expressed love and care, providing symbolic protection for her son's heart from the internal, invisible enemy.
