Sweet Potato Moho Kuih
Ingredients A 【Per-fermented Dough】
150g plain flour
110ml warm water
1 teaspoon sugar
1 tsp instant yeast (3 g)
***Per-fermented Dough: Mix ingredients (A) until it forms a dough , cover and ferment for at least 8 hours
Ingredients B
1 sweet potato (about 130g) sliced, steamed, mashed, set aside
180g plain flour
100g sugar
2 tsp baking powder (6 g)
1 teaspoon lye water
20ml cooking oil

Brown sugar Moho Kueh
Ingredient A (Ferment dough)
200g plain flour
140ml warm water
1 teaspoon white sugar
1 teaspoon instant yeast (3g)
***Well Combined and ferment for 8 hours
Ingredient B
55g brown sugar (add 20ml of hot water and stir to melt, if you want darker color, you can add 1 teaspoon of cocoa powder and mix together)
85g plain flour (add 70g flour first, leave 15g flour for adjustment)
1 teaspoon baking powder (3g)
1 teaspoons cooking oil

½ tbsp alkaline Water
2 tbsp shortening
180g Plain flour
3-4 tbsp water
Red and yellow food coloring
