What is the comfort food on a winter day? The best answer is ‘hot soup’. This Zucchini and mint charu (rasam/soup) is a refreshing meal for dinner. Let’s go into details.
Servings : 2 to 3
Ingredients:
1. Zucchini - 2 medium sized
2. Mint leaves - 20 to 22
3. Tomato - 1 medium sized
4. Tamarind - small piece (replace with 1 tsp tamarind paste or pulp)
5. Serrano pepper / Green chili - 1
6. Jaggery - 1 tbsp
7. Cilantro - Handful
Spice mix:
1. Toor dal (Kandipappu / Split pigeon peas) - 2 tbsp
2. Coriander seeds (Dhaniya) - 2 tsp
3. Cumin seeds (Jeera) - 1/4 tsp
Tempering ingredients:
1. Mustard seeds - 3/4 tsp
2. Carom seeds (ajwain/vaamu) - 1/2 tsp
3. Cumin seeds - 1/2 tsp
4. Ground black pepper - 1/2 tsp
5. Garlic clove - 1
6. Hing - a pinch
7. Curry leaves - some
Procedure:
1. Soak tamarind in water for 15-20 mins and squeeze the juice from it and discard the residue.
2. Dry roast the ingredients mentioned under spice mix and grind into a fine powder.
3. Chop zucchini, green chili and garlic clove.
4. Grind tomato and mint leaves.
5. Boil tamarind juice with turmeric and chopped green chilis.
6. Add the blended tomato & mint paste with Zucchini and boil it for 7-10 mins.
7. Add cilantro and jaggery.
8. Add the tempering ingredients to the rasam.
Notes:
1. Tomato can be chopped and added instead of grinding. Likewise, mint can be added as-is without grinding.
2. The boiling time may differ from the one I mentioned above. I used organic tender zucchini and ripe tomatoes. so, it just took 8 mins to boil. Please check if the zucchini is cooked or not before adding the tempering ingredients.
3. Instead of squeezing juice from the tamarind, 1 tsp tamarind paste can be used with water. This is a time saver tip.
