if you want a frosty consistency use lite ice cream setting as the blade spins faster so it incorporates more air and gives it that whipped texture. for an ice more dense (which is something i definitely prefer) use the ice cream setting as it spins slower. both will likely require a respin

Nice. Depending on your goals, someone might want to consider Rebel Chocolate milk. It has less protein and more fat/calories than Fairlife, but for those watching their carbs like diabetics, it has a lot less sugar. The xantham gum is a really nice call. I have it for thickening stuff without carbs, but I didn't think about making ice cream with it.

You guys, I have only one box of a whey/casein blend vanilla taste protein powder (mostly because my kitchen space is minuscule) so here are the recipes I came up with: 1. Milk+gum+protein powder+double espresso = coffee ice cream 2. Milk+gum+protein powder+cacao powder&chocolate chips = chocolate ice cream 3. Milk+gum+protein powder+leftover baked pumpkin + spice = pumpkin ice cream 4. Coconut Milk+gum+protein powder+coconut chips = coconut ice cream 5. Milk+gum+protein powder+random fruit = random fruit ice cream

Less lactose perhaps, but not removed. If the lactose was fully removed it would say 0 sugar on the nutrition label. At best it’s 50% less. And most “lactose free” milks just means they added a lactase enzyme and did nothing to remove the lactose. Not sure how that’s even legal to advertise as such

@LowCalNinja-qf4ye
14 күн бұрын
Xanthan Gum is a bit more powerful than Guar. Maybe try upping the gum to 1/2 teaspoon. Also, are you running knife around the edge and adding a bit of liquid for the second spin? Also, adding a bit of high fat cocoa could up the fat percentage and make it a tiny bit creamier too.

Although you spent only a few seconds on the subject, I found it significant that you encourage your viewers to amend rather unsatisfactory powders to be more compliant with your needs. I do that kind of reinforcement all the time. Playing with recipes is very satisfying. If I make a new recipe that turns out less than I hoped for, I usually remelt it and add something to improve it, like sweetener or flavor. Only thing I can't do is remove an ingredient, but if I feel it has potential, I add enough other ingredients to dilute the effect I don't care for. I find most failures are retrievable in some fashion. I love all those empty hard plastic containers because I buy a lot of dry bulk foods, and they make the perfect storage containers for them. I agree, though, they do take space. After making my own high-protein ice cream for about a year now, I have found an interesting side effect. I also like to bake, but now I find that the ice cream bumps other desserts off my list. The ice cream is definitely the healthier option. Thank you, Ninja.

Curious why you add the xanthum gum when the quar gum is already in the protein powder? I have read you can use EITHER but typically guar gum is for cold food. Just wondering why you use both?
@LowCalNinja-qf4ye
19 күн бұрын
It needs a larger amount than what's in the powder. Nowadays, I typically just do 1/4 teaspoon of Xanthan. That said, there are benefits of combining multiple stabilizers instead of just loading up on the same one.
