Its not required but what is required is proper hand washing. Ive worked in meat departments both wholesale factories and retail supermarkets. When I worked in the meat plant you were REQUIRED to wear a cutting glove on your non cutting. most people wore a rubber/latex glove onto of that the steel/mesh cutting glove and a cotton glove on top of that. your cutting hand a rubber glove with a cotton glove on top. you NEVER cut with a rubber glove directly contacting the knife handle they saw it as unsafe and easy to slip. the only glove that was required was the cutting glove everything else was optional for comfort/keep your hands warm. on the Retail side I'm not required to wear a cutting glove but I know some places that do. Rubber is optional but I prefer to wear when I can so when I go home I don't got that meat smell on my hands
