I thought to add a can of peas and carrots to the soupy rice mixture and bake it that way instead of adding steamed veggies on the side. REALLY good! Thank you for the idea!😊

Paysanne or peasant cut is a cut popularised by French chefs trying to make the food look as natural as possible so the item it would be in would look more homestyle and not like so many French cuts which are regimented for consistency in cooking and presentation. The paysanne cut usually follows the natural shape of the stock item used but not usually more that 10mm diameter in size in most cases the diameter and shape are dependent on the size of the stock item. But for cooking purposes as this is a cut developed in commercial kitchens by trained chefs to replicate the common food preparations, it is cut a thin as possible to facilitate the cooking process. This can obviously be seen in the dishes which use the paysanne cut, like vegetable broths, quick sauce fried sauces and garnishes for omelettes which are done to order. Take for example a Paysanne Omelette where the potato, onion and bacon, common stock items are quickly fried and added to the omelette mixture before cooking but the omelette not folded in order to present the vegetable cut and given a more natural or common appearance compared to omelettes which are flavoured or stuffed then folded in the elegant cigar method. Also you should probably be wearing a hat working around food.

Perfect! The two larger muscles ("lobes") came off perfectly (following your lines). Each came off in a large section that I was able to slice thin on a slicing machine. It all fit perfectly using a 10 pound pork butt. Thanks 😉

Only drawback with taking out just a little bit at a time is that you introduce moist air into the bag every time you open it. Trying to get every bit of moisture out is impossible. All the remaining pieces will eventually stick/clump together. The good news is you just have to break off pieces off of the stuck together clump. The tiny amount that she's showing won't make too much difference. But who freezes just three small (store bought-I'm guessing) sprigs?? I harvested about 80 leaves worth of sage directly from my garden plant. Putting them all in one freezer bag would end up being one large chunk of sage, after only four or five bag openings. So the end around with that is to make/freeze smaller bags. Kind of funny how she uses a gallon size bag when a smaller bag would of been fine. It may seem abit nitpicky, but my suggestions are valid. Just trying to help.

I'm trying this tonight, but I used chicken broth instead of water, I also seasoned it with garlic, and onion powder...added some sliced mushrooms, and topped it with seasoned breadcrumbs. From reading the comments, many others added more seasoning too. :)
