These pancakes are so quick and easy to make and the best part is you can make them ahead of time and save the batter for later. The kids also love these and you cannot taste the cottage cheese! Dark Chocolate Cottage Cheese Pancakes 1 cup cottage cheese 3 eggs 1 1/4 cup all-purpose flour 1 teaspoon vanilla extract 1/2 cup milk 1 tbsp baking powder 1/2 cup dark chocolate chips (or berries) Cooking spray or butter for greasing the pan

To make the creamiest shakes, smoothies and puddings, try freezing your sweetpotatoes after you have baked them! Bake in the oven at 425 for about 45 minutes or until you can poke a fork through them. Let them cool then freeze over night. Gut-Friendly Chocolate Pudding Recipe: 1 frozen sweepotato 1 tbsp cocoa powder 1 cup milk of choice 1 cup ice 2 dates or 1 frozen banana (optional) Blend it all together until smooth and creamy. Feel free to change the flavors depending on your craving!

EASY SALMON & SMASHED POTATO DINNER RECIPE! This is so easy and so delicious and it takes less than 30 minutes to make. Ingredients: small potatoes (make sure to dice them if they’re large) Fresh salmon fillets Large zucchini, chopped Bell peppers, chopped 1 red onion, cut to quarters Veggie seasoning: Drizzle olive oil 1 teaspoon of salt Dried oregano Salmon seasoning: drizzle olive oil 1/2 teaspoon black pepper 1 teaspoon of paprika 1/2 teaspoon of cumin Preheat oven to 400F. Add potatoes to boiling water and cook through. Meanwhile, chop veggies and toss in seasoning. Place the salmon fillets in the center of a baking pan with parchment paper and arrange the veggies around the fish. Add seasoning to salmon. Place in oven and bake at 400F for 20-25 minutes. Potatoes should be ready by the time the fish goes in the oven. Drain water from potatoes and using the bottom of a mug smash them (not too much). Add them to another pan with parchment paper. Sprinkle with salt & oregano and broil in oven until crispy (just a few minutes).

Today I made Arayes, a Lebanese recipe, but I know other countries have their own version of this as well. 1 pound ground beef 80-85% lean 1 yellow onion, minced 2 cloves garlic, pressed 1/2 cup chopped parsley 1 tsp smoked paprika 1/2 tsp cinnamon 1/2 tsp cumin ½ teaspoon coriander 1 tsp black pepper Salt to taste 2 pita breads, cut into quarters Olive oil for cooking 1. Place the ground beef, onion, garlic, parsley, spices in a large bowl. Use your hands to mix until well combined (you can also use a food processor for the onion, garlic, parsley and pulse then add to the meat and spices) 2. Cut each pita into fourth. Pull part the two sides of pita. Spoon about 2 tablespoons of the beef mixture. 3. You can either bake it in the oven (400 F for 10 minutes) or cook it stovetop Tahini sauce: 1/2 cup tahini 4 medium-to-large cloves garlic, pressed or minced ¼ cup lemon juice ½ teaspoon salt ice water 1. Add the tahini and garlic to a small bowl. Whisk until the mixture is thoroughly blended. Add lemon juice. 2. Add water 2 tablespoons at a time, whisking after each addition until smooth. After about 6 tablespoons, you will have a perfectly creamy and smooth tahini sauce. 3. You can thin with additional water for a more drizzly sauce. Adjust if necessary-if you’d like more tang, add more lemon, or for more overall flavor, add another pinch of salt.

Looking for a quick, healthy, chocolatey snack? These quinoa chocolate bars from @saltnsprinkles are PERFECT! I love that these bars are made from quinoa which I think is a very underrated seed. They’re loaded with protein, fiber and they’re full of nutrients. Quinoa is really easy to make and can be used in place of rice in most dishes (there is nothing wrong with rice, but if you’re looking for an easy way to add fiber and protein to your meal, quinoa is a great option). Ingredients: - 1 cup quinoa - 1 cup chocolate chips - 1 tablespoon coconut oil Directions: 1. Heat a skillet on medium-high heat and pour the quinoa into the skillet and stir constantly until you hear the quinoa start to pop. It will also start to smell nutty. 2. Keep stirring until it starts to turn slightly brown. Remove from heat. 3. Melt the chocolate chips and the coconut oil together in a large bowl. 4. Once the chocolate is completely melted, add in the quinoa until it's evenly coated with chocolate. 5. Pour the mixture into the loaf pan and spread it into an even layer. 6. Freeze for 1 hour & slice into bars. Recipe credit: @saltnsprinkles

This is the schedule I use every week that helps me stay consistent with healthy eating. On Fridays, I block out 2 hours to write a meal plan, grocery list and go grocery shopping. I treat these 2 hours as if it were my kid’s having a scheduled doctor’s appointment - non negotiable. On Saturdays, I meal prep. This is when I dice, chop, sautée veggies, store fruits in containers for easy access and cook up any stews. If you don’t love meal prepping, then you MUST meal PLAN if you are having a hard time staying consistent. The task of writing it out on paper (including your breakfast, lunch, and snacks) is the BIGGEST game changer in terms of sticking to an eating plan. If you want to learn more about this routine and get links to all the resources I use, make sure to head to the blog: www.ayatsleymannrd.com/consistency/how-to-start-a-healthy-lifestyle-and-stick-to-it/ The article is full of information about how to start a healthy lifestyle and stick to it!

One of the biggest reasons you’re finding it hard to stick to your health goals is that you’re trying to tackle all of it at once. When you try to change ALL things, nothing gets changed. And if you’re a mom and your day-to-day is unpredictable, it’s important to keep it simple because the first thing that gets put on the back burner when you’re tired/stressed/overwhelmed is your health. Focus on ONE area, nail that and then add something else. As I mentioned in the video, you can focus on ONE meal. Add protein, fiber, healthy fats to the meal and do that consistently for a month. Then work on another meal or add a movement goal. Take it slow because there is no finish line. Build the habits slowly over time to make it sustainable and enjoyable! Questions? Use the comment section below and I will answer them all!

No meat or actually protein with essential AAs other than the eggs and a rotisserie chicken, which aren't even organic and the eggs aren't pasture raised (and I know they have them at Costco). This isn't a bad haul or by any means unhealthy, but you're missing some key foods that make a healthy eating lifestyle more whole. I would add organic-pasture raised eggs, organic/grass fed ground beef and steak, organic chicken, and a wild caught non farm raised seafood. Not all of these at once, but choose two or so.

What to look for when choosing a ready-made food: 1. Pay attention to ingredients. Look for mostly high-quality, wholesome ingredients. 2. Look for adequate fiber and protein. At least 10 grams protein per serving and 5 grams fiber per serving. 3. Aim for no more than about 600mg of sodium. Sodium is used a preservative in these foods, so many pre-made foods can easily have over 1,000mg of sodium.
