i stole some balsamic vinegar glaze from an airbnb and went to the store to buy more and was shocked by the price. hopefully I can re-up my bottle with this recipe. this is maybe the only video which explains the approx volume reduction, avoids burning the honey, and warns about the smell lol. going to use the proportions on the nutrition info of my bottle to estimate the sugar. 2 cup balsamic ~ 100ml vinegar reduction + 200g of honey/brown sugar. should be close enough

Honey! That's a great idea. I love tart/sweet/hot and might add a little slice of fresh jalapeño or maybe ginger.

Do you think I would be able to infuse a fruit into the process? I would like to make a balsamic reduction for a pear & prosciutto pizza, and I figure I could just toss in the cores of some pears that I wont need to add flavour (and obviously take it out at the end)

I bet Calvados would work well and might come in minis. Actual fruit might end up making the syrup pulpy, or bitter from the seeds.
