sorry to "upset the party" but this system was regularly used in France in the 19th century and was introduced by them to their colony of Vietnam about 1890. The Vietnamese are now the only country to have adopted this system and use it regularly. I have a small collection found in French brocantes over years. It certainly does not require use of Vietnamlese coffee. Any good corse grind will do

The amount of coffee you used was grossly excessive, and you don't press the filter insert hard into coffee.

How long should the dripping process take? Mine is 10+ minutes and the coffee is already cold then.. I'm using this filter + Trung Nguyen Creative 5 coffee

In vietnam some people put a litttle bit of water on the under part that holds the filter for it to drip faster because of the capillare effect. And you can tilt the chamber a little, works well for me

From my experience/experimenting I've found that medium coarse works best. Too coarse and you'll brew too fast and get weak coffee, too fine and you'll wind up with something sludgy and bitter.

Finally managed to buy some of the "Creative" coffee blends in a Vietnamese store in Orlando, FLorida. They had numbers 1-5, and others, plus a dozen varieties of instant coffee. It has taken years to find this! The Gourmet Blend is available everywhere, but I wanted to try the different varieties. I have also tried their instant "espresso" product which is surprisingly good. The instant products might be the best instant coffee I've ever tried, but of course I'd much rather have freshly brewed. It's good to have some instructions on how to get the best of this product.
