Apologies for the delay! I encountered some technical difficulties that prevented me from responding sooner. It seems your Tepache has thickened into a syrup-like consistency, indicating spoilage. Surprisingly, Tepache can spoil this way due to contamination. Mold on the surface is another common cause, which can occur when not stirred daily. I'll be releasing an update video soon with more detailed information about Tepache and so on. Again, I apologize for any inconvenience caused. If you have any more questions, please let me know!

Loved the recipe Sean, but I think Mexicans use white onions, instead of the yellow onion. But it still comes out delicious. I noticed you are using Carr's biscuits, but a great alternative is tortilla chips.!! Thanks again, and luv the lime squeezer. Have never seen one like it.!!!

Try just using zest and the fruit of the limes and youll get alot less bitterness you ditch the white pith part thats between the fruit n skin and dont need to counter it with as much sweetness and add a. Little rum if feeling like gettimg tipsy as it makes a good cocktail too and this can also be done with oranges or lemons for a different fruity dessert drink.

To reduce the bitterness you can use some limes without the peel.

José Cuervo Especial, what you appear to pour into your shot glass is not tequila. It’s a blend of agave distillate and grain alcohol. It’s bad. Try to find a bottle that states 100% agave. By law, tequila needs to be 100% blue Weber agave. I recommend el Tesoro. It’s relatively affordable and it’s actual tequila. Also, don’t shoot it. Shots are never pleasant. Take small sips either following or followed by the lime. I prefer to do: a sip of tequila, followed by a bite of lime with a bit of salt, followed by another sip. It allows you to appreciate the nuances in the sweetness of the agave. Enjoy!

In Brazil we call lime = limão. So here we use limes to do "limonada". What do you call lemon we call "limão siciliano", like Sicilian Lemon (don't ask me why😅). Also the "Brazilian Lemonade" here is known as "Limonada Suíça" (Swiss Lemonade). Green = Lime = Limão Yellow = Lemon = Limão Siciliano

I like this tepache recipe the best, because you don't have to measure out any sugar, you just throw in the cone instead! Great! I'm just wondering what the difference is between air sealing the tepache jar like in this recipe, and just covering the jar with a breathable cloth?
