Thanks for the great video. Nice introduction to the "Jr". I've just aquired one and am looking forward to using it. I'm a pellet and gas grill guy but really want something I can get the charcoal smoke flavor. My concern with the Jr. is can I get a slow smoke, 220c, long enough to finish up say a 8 lb. port butt.

I didn’t catch what temp you were running. Ill run 230 to 260 and there perfect in 3 hours. I do like the the drip tray pie pan for the veggies with the meat basted goodness. Now im going to see what else your up to. I dont have a Joe jr yet but I have a couple other Joes.

I was a kcbs competitor and judge, once the kids graduated college we decided to move, I gave away all my smoking equipment to friends and have been analyzing the purchase of one last smoker to take me and my wife home. Your videos convinced me that smoker was a KJ Jr, arrived yesterday, re-watched all your videos in anticipation of my first cook. I love your presentation style: no nonsense, thoughtful and intelligent. Just found your junior vid mate. Are these grills made in the US? Just over here in the UK, they are like £120 more expensive than the USA. Liking the hat too, try and find one with nough ear cover is hard work for some reason lol.

According to KJ's site, they're manufactured in Yixing, China. I agree about the hat. I need some with those little flip down ear muffs!

I just got the Jr. I am actually in the same situation. I have a big metal egg but it too big for small family. Jr kamado is perfect for fast small portoins grilling. Thanks for all the tips.

no ! do not soak the wood. You'll get the wrong kinda smoke and your food will not be as good as using dry wood. I know some people tell you to; but experienced people ( I've been smoking for over 20+ years) do not... I made that mistake the first couple of years and then in a competition the judges told me not to do it anymore. They went thru the chemistry of the heat & smoke. So I haven't for years and its paid off.

No. The wood combusts which causes the good clean smoke. Soaking wood can cause it to just smolder, or steam, instead of combusting.

@@swimadamswim Definitely not. Do you mean half open at startup or once the grill's up to temp? If it's half open, I strongly suspect it will run away at high temps. The pamphlet says to leave it open only a crack, which is what I always do, and have no problems with temp.

Paper works great. if you add a couple of cotton balls with alcohol. Light it up one time with a a simple lighter and you are set. Try it, no need for anything else

Thanks for your video! I,ve had the Joe Jr for 14 months now and I like a lot. I also use the Kick Ash basket and I find that the bottom of grill get´s very hot. To avoid this, I leave about a 1/4 inch of ash on the bottom. Ash is a very good insulator from my experience of pellet and wood chip boilers. Another trick that I use is to put the cast iron grate between the deflector plate and a drip pan. This reduces somewhat the temperature of the drip pan. You can also use a small , 6 inch, aluminium pie form on top of the cast iron grate and put your Beer Can Chicken in it. This works very well. In Fireboard 2 Drive, you can limit the fan's capacity to, for example, 25% so as not to exceed the desired target temperature. Do you not have that possibility in your regulator? BR from Sweden

This great. I got a Joe Jr. for Christmas and I haven’t fired it up yet. We live in central PA and it is 9 degrees out with 2 feet of snow. But seeing you with a wool coat and wool hat has inspired me. I also subscribed so I can see all of your early videos to guide my efforts and learn from them. I too purchased the KickAsh tray and I’m waiting for the Soap Stone to arrive. Thanks for sharing your evolution as a pit master.

Great video! I've had the Joe Jr for about a year now and used one of your original video to get me started. Interesting to see you've stopped using the charcoal chimney. I find it a bit fiddly and quite smokey and was thinking of trying something else too. Also I don't use the charcoal basket so might give that a try 👍

The chimney is probably not needed, even with the setup that it comes with. I'm planning to release an updated approach to cooking with the KJ Jr, including everything I've learned in the past few years since I put this original video out.

Nice vid. informative. Like you, I have a KJ Classic and Jr., still getting used to the Jr. For temp regulation, I have an iKamand and absolutely love it. I've read many negative reviews of the iKamand, but no...it works just fine, and no need to make any mods to the vent. I'm trying to hold off on buying one for the Jr. (kinda defeats the less expensive pricing) and learn to manage the cook with the vents. Regardless another couple of recommended accessories: cowhide gloves to handle coal, hot utensils etc; and a bluetooth compartment and meat temperature monitor. So far, I'm a fan of the KJ products...not hating, but a more affordable option vs. the BGE. Nonetheless, each are excellent at what they do.

The whole secret is to start a proper fire. Start your fire in the grill, drop the chimney. I have one and started using it, but there is no need for it. It's just something American you don't need. Make sure your coals are touching well for slow transfer as you cook on for a long time. There is a sequence you should use. Start the fire in the grill with no stone or grill in it and the lid open, when you establish fire right across the bottom, put in your stone and grill, shut the lid, leave the top damper wide open until you see 125degrees C, close wide open to the holes wide open, wait till you see 150C. Close the bottom damper to 12mm open, close the top damper to a 1/4 🌒 moon, put your food in now. You will see the temp fall back to 125C. You will now have a stable fire that will last for hrs with very little adjustment. If the sun comes across your grill, be careful. If you are cooking in the sun, dial back the start temps 10C. That's it.
