【Mocomichi Style】#058 Boiled tomato dish with chicken
【Ingredients/amount】
Chicken breast/1
Olive oil/1 tbsp
Potato/1
Zucchini/1
Eggplants/1
Onion/1/2
Garlic (grated)/1
Ginger (grated)/1/2
Salt and pepper/a little per each
Butter/2 tbsp
Canned tomato (whole)/400 g
Basil (chopped)/desired amount
Consomme soup/200 ml
White wine/50 ml
Multigrain rice/desired amount
Baby leaf/desired amount
【Cooking process】
①Poke a chicken breast overall and cut it into bite-sizes.
②Remove potato skin and eyes and cut it round, cut a zucchini randomly, chop up a onion.
③Heat olive oil in a frying pan, fry up the both sides of chicken, add ②’s vegetables and fry them all up.
④Add garlic, ginger, salt, pepper, and butter after the vegetables become soft, add canned tomato and fry them up while crushing the tomato.
⑤Add basil, consomme soup, and white wine in ④ and mix them up, turn down the fire power and simmer it for 12 - 13 min.
⑥Put multigrain rice in a plate, decorate ⑤, place baby leaves with olive oil together.
【Tips】
・You can use chicken thigh or chicken breast strips as alternatives.
・You can also add olives or capers.
