2 simple Bhindi recipes
Ingredients
Recipe 1 - Simple quick Bhindi
Bhindi/Lady finger/Okra: 250-300 gram
Green chillies: 4-5
Onion: 2 medium size
Wash 250-300 grams of ladyfinger, then leave to dry on a plate or wipe dry with a cotton cloth. Once dry remove small portions of both the ends and through away. Cut the remaining portion into small pieces that are not very thin.
Finely chop 2 medium-sized onions and 4-5 green chillies. Then heat a kadhai/pan and add 6-7 tablespoons oil, once the oil is heated add half tea spoon jeera, once they start spluttering add finely chopped onions fry for a few seconds then add half a spoon of salt so the onions fry quickly fry for 1 min more then add the finely chopped chilies fry for 1-2 minutes as onions start turning slightly brown add half tea spoon turmeric powder mix well and add the chopped bhindi/ladyfinger fry on a medium flame for 1-2 minutes so there is no stickiness left the cover with a lid and cook for 1-2 minute add 1/4 tea spoon salt or as per taste. Mix well and a quick and tasty bhindi ki sabzi is ready.

Bhindi/Lady finger/Okra: 250-300 gram
garlic cloves: 3-5
Redchilli powder: 1-2 teaspoons
Fennel powder: 1-2 teaspoons
Carom seeds/ajwain 1-2 teaspoons
Dhaniya dry coriander seeds: 1-2 spoons
Turmeric powder 1 teaspoon
Dry roasted jeera/cumin powder half teaspoon
Amchur powder: 1-2 spoons
Salt 1-2 teaspoons
Gram flour 1 tablespoons
Rice flour: half tablespoon
Wash 250-300 grams of ladyfinger, then leave to dry on a plate or wipe dry with a cotton cloth. Once dry remove small portions of both the ends and through away. Cut the remaining portion into thin and long pieces.
Remove all the cut pieces in a large bowl and plate and add Redchilli powder: 1-2 teaspoons
Fennel powder: 1-2 teaspoons, Carom seeds/ajwain 1-2 teaspoons, Dhaniya dry coriander seeds: 1-2 spoons
Turmeric powder 1 teaspoon, Dry roasted jeera/cumin powder half teaspoon, Amchur powder: 1-2 spoons
Salt 1-2 teaspoons, Gram flour 1 tablespoon, Rice flour: half table spoon
Mix well with the bhindi /lady finder pieces then add 1 table oil so the spice powders stick well with the bhindi.
Heat a kadhai, and add 6-7 tablespoon oil once the oil is heated put the gas on low flame and add half tea spoon jeera/cumin, and 3-5 garlic cloves finely chopped
Once the garlic starts turning slightly brown add the bhindi and fry well on medium to high flame for 1-2 minutes cover with a lid and cook on low to medium flame for 3-4 minutes
Keeping checking and steering in between after 1-2 minutes. after 3-4 minutes you will see the color of the bhindi has changed and the oil is separating add salt as per taste if required and the chappati masala bhindi is ready to serve
