Today in our vlog we have made a step-by-step Aloo Samosa Recipe with tips It is a simple & tasty street food recipe do try it and share your comments.
Ingredients
Maida: 200-250 grams
Ajwain/carrom seeds: 1 tea spoon
Salt: 1- 2 tablespoon /as per taste
Ghee: 3-4 tea spoon
Potatoes: 4-5 medium size
Green chillies:4-6 medium spicy green chillies
Curry leave: 5-6
Ginger: 1 inch
Oil : 500 grams
Turmeric powder: half teaspoon
Fennel powder: half tea spoon
Coriander seed powder: half tea spoon
Black pepper powder/garam masala powder:1/2 tea spoon
Hing: ¼ tea spoon
Coriander seeds: 1/2 teaspoon
amchur powder-1 tea spoon
cashew nuts: 6-7 pieces
fresh coriander and pudina leave: handfull
Preparation:
Take 1 bowl of maida approx. 200-250 grams add 1 tea spoon ajwain/carrom seeds and 1 tea spoon salt. Mix well the add 3-4 tea spoon heated ghee
Mix with maida using spoon then once cooled mix well with hand until when held together in hand it holds together for a while
Then using little little quantities of water and knead a dough not very soft dough it must be a little tough like we do for puries.
Cover the dough and allow to rest.
For the filling boil 4-5 medium size potatoes in cooker . make 2 whistles . once cooled down peel the potatoes and slightly mash it
Then for masala take a mixer jar , add curry leaves , inch ginger finely chopped, 5-6 green chillies 1/4 tea spoon salt and grind it add little water if required
Now heat a kadhai, add 1 laddle oil/7-8 table spoons, add 1 tea spoon jeera , one fourth tea spoon hing/asafoetida 1 tea spoon coriander seeds
Then add the chilli ginger ground mixture and roast on low to medium flame then add half teaspoon Turmeric powder
1 tea spoon Fennel powder, half tea spoon Coriander seed powder, 1 tea spoon amchur powder ,1/2 tea spoon Black pepper powder/garam masala powder mix well 1 tea spoon
Salt, cachew nuts mix well, fry for 2-3 min taste add salt as per taste if required. Add finely chopped coriander and pudina mix well. Then remove into plate and allow to cool down.
Dousgh has rested for a while make 5-6 small dough balls take a dough ball roll into medium size elliptical shape roti. Make all rotis and keep ready, then take 1 roite cut into 2 equal halfs horizontally . prepare a thick liquid mixure by adding a spoon of maida and add water mix well
Then take 1 half of the roti we cut, apply the maida liquid mixture all over lift both end and put both ends one above the other stick well especially the tips
The hold like a cone in hand fill the potato mixture little by little then closes the remaining ends and press well.
Do the same and prepare remaining samosa, once all are ready then.
Heat a kadhai add oil and once oil starts heating up add the samosa in batch of 3-4 . Do not overheat oil. Fry samosas for 1-2 minute the remove in a plate for it to be really crispy then put back in oil after few minute to fry till golden brown.
Fry all samosa on medium flame so they cook well, serve with pudina or tamarind dates chutney
