We will introduce you to the process from harvesting to sun-drying the new rice, and a special menu to enjoy rice.

I've listed what I've made by eye, so when you make it, please prepare it while tasting it.
[Whitebait with Sansho (Japanese pepper)]
1 pack whitebait
About 1 handful Sansho (Japanese pepper)
1 tbsp sake
1 tbsp mirin
1/2 tbsp soy sauce
[Minced salmon and egg]
1 slice salted salmon
2 eggs
1 tsp sugar
A little salt
[Oil miso with walnuts]
250g pork belly block
2 pieces ginger
70g walnuts
200g miso
50ml shochu
80g sugar
[Imoni-style soy milk miso soup]
100g thinly sliced pork belly
1/2 pack Hiratake mushroom
1/4 carrot
3 Satoimo (Japanese taro)
500ml Dashi soup
200ml soy milk
2 tbsp miso
[Fried rice ball Ochazuke]
2 rice balls (salt flavor)
Appropriate amount rice oil
2 tsp of perilla pickled in plum vinegar
1 pickled plum
Appropriate amount chopped seaweed
Appropriate amount dashi stock (lightly seasoned with salt and a little soy sauce)
Appropriate amount Sencha (green tea)
[Salmon roe pickled in soy sauce]
300g raw Salmon roe
3 tbsp soy sauce
2 tbsp sake
2 tsp mirin
1 and 1/2 tbsp water
