After several attempts, we've managed to make vegan and gluten-free waffle dough. These waffles will also satisfy the palates of those who eat their traditional version.
The dough has a classic flavour and doesn't stick to the waffle iron. It is very filling and nourishing.
Waffles with coconut whipped cream (we're sharing this recipe too) are a perfect match.

Time: 40 minutes
Amount: 4-5 waffles
Ingredients - waffles:
100 g rice flour
100 g corn flour
100 g potato flour
100 g brown cane sugar
1 tablespoon of ground blond psyllium husk
1 teaspoon baking soda
250-300 ml plant milk (e.g. soy, rice or almond)
50 ml coconut milk
50 ml sunflower oil
1 teaspoon vanilla essence
Ingredients - whipped cream
250 ml well-cooled coconut milk
1 1/2 tablespoon brown powdered sugar
2 tablespoons instant rice gruel
Instructions:
Mix the dough's dry ingredients. Add plant milk, coconut milk, oil and vanilla. Mix them thoroughly or blend them and put the mixture aside so that the blond psyllium and flour absorb water.
The dough should thicken over this time. If you think it's too thin, add a few tablespoons of rice flour.
Pour the cooled coconut milk into a tall dish and blend it with powdered sugar for a minute. Then, add rice gruel and blend again. Put it aside for a few minutes so that the whipped cream thickens. Heat up the waffle iron.
When it is hot, grease its inside with a silicone brush dipped in oil. Pour a little dough onto the middle of the bottom mould. Close the waffle iron's lid and bake the dough without opening the lid for at least 5 minutes, so that the dough crisps up well. Open the lid and check if the waffle has browned. If so, prise it off gently with silicone spatula and unstick the waffle from the waffle iron. Remember to grease the inside of the waffle iron's moulds before pouring another portion of dough onto them.
Mix the whipped cream again and if it is necessary add a little coconut milk or rice gruel to obtain the right texture.
Put whipped cream on each of the waffles. You can also add a little of your favourite fruit preserve or jam.
