Today we are taking on a classic in our vegan and gluten-free kitchen. Cinnamon rolls, as they are referred to, on the one hand a well-known recipe, but on the other hand, quite a lot of room for your own interpretations. We hope that our version will taste not only to those who follow a similar diet as we do.

Time: 120 minutes
Quantity: 8-10 buns
Dough ingredients:
150 g of potato flour
100 g rice flour
50 g corn flour
50 g chickpea flour
1/2 cup brown powdered sugar
3 tablespoons of ground flaxseed
1 teaspoon instant yeast
150 ml of warm water
100 ml of sunflower oil
100 ml coconut milk
Filling ingredients:
1/2 cup coconut sugar
2 teaspoons cinnamon
1-2 teaspoons of oil
Frosting ingredients:
1/2 cup brown powdered sugar
A few teaspoons of coconut milk
Method of preparation:
Mix all the dry cake ingredients together so there are no lumps and pour in the oil, milk and water. Mix thoroughly and set aside to let the ingredients combine and the yeast begin to work.
After about 20-30 minutes, take the dough out onto a silicone pastry board and with hands moistened with water or oil, form the dough into a rectangle about the size of an A4 sheet.
Grease the dough on top with oil, sprinkle with coconut sugar and cinnamon.
Roll it into a tight roll. With the help of floss, for example, we cut off discs several centimeters thick. Cutting with a knife would deform the rolls, so floss is the tried and most recommended way.
On a baking tray lined with baking paper, arrange the rolls and put them in the oven set to rise for about 30 minutes.
Then set the temperature to 170 ° C with thermo and bake for about 30 minutes. After that, remove from the oven, let the buns cool down a bit.
