Today I am sharing 3 meals we ate this week with an added extra as a bonus!!! These are all really easy meals, which are packed full of flavour.. I hope you enjoy them if you try them at home and would love to know what you think if you do :)

TOMATO SAUCE RECIPE: • HIDDEN VEGGIES PASTA S...
INGREDIENTS:
Harissa Chicken:
4-6 chicken thighs (boneless), bunch coriander, bunch parsley, 1 lemon - juiced, 2 heaped tsp rose harissa, salt & pepper, Olive oil, rice
Sausage & mash:
10 sausages, 3 extra large potatoes, 300g peas, 8 Yorkshire puddings, gravy granules
Loaded nachos:
1 extra large bag tortilla crisps, 750g lean beef mince (for leftovers), fajita seasoning, homemade tomato sauce - 6 labels, cheese, avocado, sour cream, salsa
Tomato sauce:
(2 onions, 6 garlic cloves, 2 tins chopped tomatoes, 1 jar slow roasted pepper, 3 peppers, 2 veggie stock with 400ml water, 1tbsp rose harissa, 400g carrots, celery salt, garlic salt, 1tsp oregano, 1tsp basil
Shepherds pie:
Left over mince, 4 frozen cubes spinach, 2 extra large potatoes, cheese
