Dhandi aluvi boakiba (Cassava cake) is one of the most well known recipes made by Maldivians using cassava.
Ingredients:
- 2 cups grated tender coconut (gabulhi)
- 2 cups grated cassava
- 1 cup sugar
- 2 tbsp rose water
Directions:
- Preheat oven at 160 - 170 degree C.
- Grease an 8 - 8.5 inch round pan and set it aside.
- Peel the outer tough layer of the cassava using the tip of your knife. It will come off easily. Now grate the cassava. Remove any woody center, if any, while grating.
- Grate the tender coconut, locally referred to as gabulhi, using a coconut grater.
- Add grated cassava into grated tender pieces. Add sugar and rose water. Combine well and grind it in a mixer/grinder.
- Put the grinded mixer into the oil greased tray and bake it for 45 to 1 hour until the top of the cake is golden brown and sides of the cake starts to leave the pan.
- Remove and cool completely before serving.
