Hello @CarnivorousChef! I just wanted to let you know my husband and I tried your Crusted Salmon recipe from your book and we fell in love with that taste! Historically we have not really liked salmon cooked by us at home. But realizing it's healthy I decided to give your recipe a try and my oh my was it GOOOOD! All of your recipes look so good, as usual! I never tried mozzarella sticks before. I'm no chef, but when I want parmesan in my coatings I mix grated parm into the pork rinds. I don't know if that would help with the mozzarella sticks but it makes great chicken tender coating. Don't tell anyone but I cook my chicken tenders in coconut oil. I like the flavor! Thank you for all your hard work.

Regarding the double-coating problem, I've found using chicken flour (made my own) for the first coat works out great. I did "breaded" (meated?) pork chops that way with chicken flour, pork rind crumbs, and buttermilk for the wash, and they turned out quite good. Thinning out the buttermilk a little helps if you use it, though.

Doesn't the pork rinds have seed oil? They're blasted in hot oil here in England

@@1robjames no. Why spend the money on seed oils when they are mostly oil?. They are fried using the natural oil that is in them. We can even get microwaveable pork rinds. You can easily make your own in an airfrier.

I love the microwavable kind but the texture is such they can easily get stuck in your throat. I wouldn't recommend for a little kids and keep a glass of water handy

My go to for boiled eggs is to start with cold water, let come to boil, turn off heat and let sit 5 minutes for soft yolks 6 for hard yolks, dump off hot water and cover in cold.

I am lazier than you are! I have gotten semi addicted to just plain pork rinds and sour cream! I am like Anita at Ketogenic Woman and have to use white pepper instead of black pepper. Now drooling at the pepperoni chips with shredded ham, turkey and cheese with your special sauce!

You remind me of Seth Rogan, I'm sure you get a lot of that, but I've gotta say I've cooked 2 recipes so far, and I love them! The ranch chicken breast in the air fryer and the butterflied chicken breast with the spicy Alfredo sauce. I was amazed by the taste. I wish you lived by me. I am an x personal trainer and would love to train you/ work out with you! Did I mention you remind me of Seth Rogan? It would be a blast to get to know you. Keep up the great work!

I would love to go carnivore, but I can’t imagine how I could ever afford within our budget, since I will only buy pastured, humanely raised meat. Also, my husband is skinny but eats like a horse. I will try some of these whenever possible.

I find your recipes very innovative. I only have one problem for religious reasons. I do not use any pork products. Most of your recipes use pork rinds is there another substitute outside of the keto not flowers for making a pizza crust or flatbread?

I don't know if it would work quite the same for crispy recipes etc. But maybe chicken flour or beef flour? Maybe beef or chicken jerky ground up? There are videos on how to make chicken and beef flour, and beef jerky on YT but I don't know how well it would work for what you would want? There may also be alternatives "rinds" to pork rinds? Hope you can figure out a work around!
