In a city with no shortage of delicious donut options, Justin Newstrum does things a little differently.
"I make [donuts] in a way that no one else really does. I fry them all to order, so they come out hot, and I serve them fresh," said Newstrum.
Newstrum is the chef and owner of 9th & Hennepin Donuts. The name comes from an old Tom Waits song.
The idea for the business, well, it first started percolating during a trip to The Big Easy.
"The first time I went down to New Orleans back in 1999, I ended up at the Cafe Du Monde, which serves hot fresh beignets," said Newstrum. "And yeah, I thought to myself, wouldn't it be great if I had a donut shop where I cooked everything to order? Not just beignets, those are great, but cake donuts, fritters, filled donuts and everything. You know, I put that idea in my pocket, and 15 years later, I decided it was time to make it a reality."
