In this video I will show you how to make sourdough bread. I am a beginner also so I will share the fails and wins of my journey. Don't be disheartened if it doesn't work out first time.
What will you need:
Sourdough Starter (Levain)
Flour
Salt
Water
Weighing Scales
2 Bowls
Tea Towel
Something with a lid to bake it. Ideally a Dutch Oven but not necessary. I don't have one but I have a deep, wide oven proof pot and it worked perfectly. Alternative, a deep Pyrex bowl and lid.
For 1 loaf
400g of flour (300g white, 100g wholewheat)
100g of sourdough starter (levain)
310g of filtered water, room temperature
10g of sea salt
Mix your water and levain lightly
Add flour and salt
Mix until well blended, cover and allow to stand for 30 minutes.
First Fold
Wet Your Hands
In the bowl, stretch and fold the dough from each corner, repeat. Total 8 folds
Allow to stand for 30 minutes
Repeat this two more times but after the third stretch and fold, allow the dough to sit for 2:30 hours.
First Shape
Fold in to centre from four corners, turn over and allow to stand for 20 minutes.
Final Shape
Fold into centre and then pull ball towards you to tighten dough.
Put in floured banneton or bowl lined with a tea towel
Put into plastic bag and leave in fridge overnight.
Heat Oven to 220 degrees
Score your bread with a blade or really sharp knife
Put in your baking dish, cover and bake for 20 minutes
Remove the cover and bake for a further 20 minutes
