Thanks for alternate instructions on how to bake the sweet potatoes if you don't have a dual function oven. (I didn't know such ovens even existed until I started watching European cooking channels like yours.)

Wow, this is next for me, I love sweet potato and chickpeas, but never thought of combining them. It sounds so delicious, I'm one of those that sprinkle cumin on alot of recipes, I think it would be great on this. You've got me hooked on garbanzo beans. I made several of your garbanzo salads all summer long and love them! Now moving into the colder weather dishes like soups & stews. I had this last night and it's delicious. Even better, it's delicious the next day warmed up! Someone mentioned I have a 'thing' for Spanish food lately. Actually, it has to do with the fact these dishes are 30 min dishes and don't typically require any marinading etc. The fact that they're fantastic is a bonus. Thanks for another great dish!

In any language, he had such a low, soothing voice. When I asked, he said he had indeed worked in radio while in college. He didn't mention why ge never putsued it

Just made this! I let my sweet potatoes get a little too soft, so I will be careful about that next time, but otherwise, wonderful dish as usual! This is becoming my favorite cooking page. FOR THOSE INTERESTED According to Cronometer, each serving contains... 653 kcal 10% protein 20 g 54% carbs 65 g 36% fat 26.4 g Fiber 21.7 g I would put down the micronutrients but I have Cronometer set for my own needs, which have been altered from the standard recommendations. Happy cooking!!!

This dish is PHENOMENAL!!! I am sitting here with my mouth burning, having just eaten a heaping plate of it for dinner. It's quick, easy and sooo delicious! Have one sweet potato already boiled...I usually just sprinkle salt, chili flakes, Italian seasoning with a dribble of olive oil, mash with my fork & enjoy! Going to try this, with the lightly sauteed sweet potato cubes!

Finally made this and it is so delicious! Unfortunately struggled to find Spanish Paprika in Scotland so substituted it for a mix of smoked & normal paprika along with some chilli powder :) also added some lemon in at the end to add a bit of sweetness and a handful of spinach to use it up haha. Will definitely make this again :D

New subscriber here! I love your recipes and enthusiasm, I'm vegan and you're giving me lots of delicious ideas. BUT you do love adding a lot of olive oil (and salt!). Why not try cooking some recipes without the oil at least, you'll be amazed how good the dishes taste and you can eat more as it's the oil that has most of the calories. Taste buds adapt quickly, once you start cooking without oil and excess salt, you will probably want to continue cooking and eating in this way, herbs and spices and the ingredients themselves have already all the flavour you need. Recipes are always evolving and adapting and a lot of vegan (and health-conscious people) are reducing or eliminating added fats and salt, especially if they want to stay slim and healthy. I can't imagine making any type of sauce or soup without frying the aromatics first in oil. Here he uses garlic and onion as aromatics and tomato as the sauce base, so frankly there's no way around the oil, unless you fancy onions boiled "raw" in some dingy canned tomatoes. My taste buds would certainly not adapt to that, but then again I'm not vegan (by God's grace). Salt is also essential to bring out all the flavours, though there's no need to overdo it obviously (which he doesn't). I dislike this trend of people putting nutrition, calorie counting and holier than thou bullshit like veganism before the enjoyment and comfort of delicious food, which is the essence of cooking. It's not about survival, staying healthy or optimizing bowel movements. Never compromise on flavour, kill the animals.

I agree with the London poster. It's about the flavor. I love Mediterranean dishes. Esp tapas. But w/o taste why bother. What you do in your kitchen is your business. But please don't preach bc I'm smart enough to make my own decisions. As Are you. Be happy in that freedom. Rejoice in it. The permission you need is on your shoulders. And don't ever apologize for your choices.

You are so specific about how much olive oil to use, but not how much salt/pepper. I suggest that you dispense with referencing how much of what to use and just tell us that we should be applying to taste.
