Ube Champorado is a type of Filipino sweet porridge made with glutinous rice, coconut milk and ube, for this recipes I ube flavoured condensed instead as a substitute for ube. Traditionally champorado is prepared with cocoa but this version I made a twist and use ube and added corn to it. Like me, you will be surprised how good this type of champorado is! And yes, this recipe uses real ube giving it that nice texture.
Ingredients:
1/4 cup purple glutinous rice
1/4 rice
450 ml coconut milk
1 cup ube condensed milk
2 cups cor kernels
