1. Ingredients:
Noodles
Lard, special oil (or vegetable oil), scallions, shallots, dried shrimp, shrimp skin, dried scallops
Dark soy sauce, steamed fish soy sauce (or light soy sauce), oyster sauce, white sugar, white pepper
2. Method:
Clean and prepare the dried shrimp and shrimp skin, and soak the dried scallops in water for a few hours, then tear or chop them. Cut the scallions into sections and slice or shred the shallots.
Prepare the sauce: mix one part dark soy sauce, one part oyster sauce, and three parts steamed fish soy sauce. For a single serving, use about 15 grams of white sugar, for two servings use 30 grams, for 5-8 servings use approximately 40-50 grams, and add a little white pepper. Put the mixture in a small saucepan and heat it over low heat while continuously stirring until it begins to bubble slightly. Be careful not to let the temperature get too high; if it does, remove it from the heat and continue stirring to prevent the sugar from caramelizing. Once the sugar is dissolved and the sauce slightly thickens, it's ready.
In a pan, heat one part lard and two parts special oil (about 20-30 grams of oil for one serving of scallion oil noodles) to around 140 degrees Celsius. Add the scallions and shallots and cook over medium-low heat, gradually increasing the heat until the onions are caramelized. Remove from the heat and chop them finely with a knife.
Reduce the heat to medium and fry the chopped dried scallops briefly, then remove them from the pan. Next, fry the dried shrimp and shrimp skin briefly, then remove them from the pan.
Heat the oil to around 200 degrees Celsius, then pour in the prepared sauce and stir slightly.
Pour the scallion oil sauce over the noodles, sprinkle with the fried dried scallops, dried shrimp, shrimp skin, and chopped scallions, and mix well. You can also add some blanched greens if desired.
