This video is a little blast from the past but when I originally shared a picture of the banana breakfast muffins I made on my instagram - people wanted to see the recipe so here (if not 6 months later) it is!

Breakfast Banana Muffin Recipe:
Ingredients:
1 Chia Egg (1 tbsp chia seeds + 4 tbsp water, left for about 10 minutes until the mixture turns jelly-ish)
3 spotty ripe bananas - mashed
1 tsp baking powder + baking soda
Splash of vanilla extract
3 tbsp olive oil
1/2 cup coconut sugar
2 tbsp maple syrup
Tiny pinch of pink himalayan salt
Cinnamon
3/4 cup dairy-free milk
1/2 cup almonds - ground to make a flour
1 + 1/2 cup gluten free flour (I used brown rice)
1 + 1/4 cup oats
Method:
Combine all ingredients in a bowl and place into lightly oiled muffin cases.
Bake in the oven at 180 degrees for 30 minutes.
Extras:
1 tbsp maca powder
2 tbsp flaxseed blend
1 tsp of fruit compote on top of each muffin (or could use frozen fruit)
Nuts for on top (walnuts would be good)
