Especially, the abalone and its guts, stir-fried with butter and sesame oil respectively, gives you an explosive umami in your mouth. You’ll experience the euphoria of its rich flavor!
😘 [Abalone Pot Rice] - Intermediate - 3 servings - 40 min. (except rice-soaking time)
- Ingredients: 8 abalones, 2 shiitake mushrooms, 5 stalks of small green onion, 1.5 cup of white rice, a half cup of sticky rice, 2 tbsp of butter, 2 cups of kelp stock, 1 tbsp of cooking wine, 1 tbsp of soy sauce, 1 tbsp of sesame oil, 1 tbsp of sesame seeds
1. Soak the washed white rice and sticky rice for 1 hour, and drain in a strainer.
2. Use a cooking bristle to rub the abalones and pull the flesh and guts out with a spoon. Remove the teeth and dirt sac, and finely chop the guts.
3. Score 5 abalones by slicing the top part in a grid pattern, and slice the rest of them into a desirable size. Slice the shiitake mushrooms, whose bottom is removed, and finely chop the green onion
4.With sesame oil In a pot, stir-fry the abalone guts, and then stir in the soaked rice, soy sauce, and cooking wine.
5. Once the rice becomes translucent, add the kelp stock. When it starts to simmer, stir and lower the heat down to low heat before letting it simmer for 15 minutes. Then, place the shiitake mushroom and simmer for 5 minutes more.
6. With 1 tablespoon of butter in a heated pan, slightly stir-fry the abalone pieces.
7. Once the rice is cooked, place the abalones atop, and let it rest for 5 minutes with the lid on.
8. Uncover the pot, and add 1 tablespoon of butter, green onion, and sesame seeds.
tip. You can combine soy sauce with small green onion or chive for the sauce.
