Kung Pao Chicken
Ingredients
Boneless chicken chunks - 500 g
Salt - 2 tsp
Black pepper powder - 1 tsp
Soy sauce - 1 tbsp
Egg white - of 1 egg
Cornflour - 3 tbsp
Rice vinegar - 1 tbsp
Sugar - 1 tbsp
Soy sauce - 1 tbsp
Cornflour slurry - 2 tbsp+ 1/4 cup water
Finely chopped Ginger - 1 tsp
Finely chopped Garlic - 1.5 tsp
Sishuan peppercorns - 1.5 tsp
Dry red chilli - 4 to 5
Roasted Peanuts - 1/4 cup
Spring Onion greens -1/4 cup
Oil for cooking - 3 tbsp
Method
• Marinate the chicken in salt , pepper powder, soy sauce, egg white & cornflour.
• Leave it aside for an hour.
• After an hour, shallow fry the chicken pieces on medium heat.
• Remove it from the wok and add ginger& garlic and stir for 2 to 3 minutes.
• Add sugar, peppercorns , vinegar and soy sauce and stir for another 2 to 3 minutes.
• Add the cornflour slurry and cook well.
• Mix in the chicken pieces, peanuts and onion greens and give it a good mix.
• Taste and add salt if required.
• Kung Pao Chicken is ready to relish.
