There are mainly two types of alkaline water or lye water sold in Malaysia. One is safer for consumption and can be mixed into your food. It is made from base chemical called Sodium Carbonate. When mixed with water, Sodium Carbonate will dissolve to form Sodium Hydroxide, an alkali for making noodle, rice dumplings etc. There is another type that is marketed with the same Malay name "Air Abu Soda". This has the chemical compound of Sodium Silicate (or glass water), an alkali used for soaking "Dried Sotong" but is discarded by thoroughly rinsing off the alkali residue after the soaking process. Best way to buy is to go to Chinese Grocery that specialized on Chinese cuisine.

Yes you can get from the link. I bought from that shop delivery quite fast. Can only use for this zhang. The savoury one probably not cos the leaves not big enough 😅
