Wow - made this for my wife and I tonight and it was absolutely fantastic. I used littleneck clams and was afraid of what the champagne would do to the flavor, but wow - everything (especially the toast) was really really good. Thank you for this. Simple but great.

I used to make live muscles in a similar way. I'm not vegan/vegetarian but these days I can't bring myself to kill the little critters by cooking them. Can't cook live clams or lobster either.

My food taste was based on prejudices, I was not into seafood at all. But this year I've decided to enrich my food cultures and now seafood is one of my fav ones. At the shores of our Black Sea there are many restaurants with delicious seafood and this was my whole menu this summer.😅I have only cooked fish, calamari and prawns, but I should try cooking mussels or clams by your nice recipe.😇

Great idea…. Close to my linguini and white clam sauce recipe. Question…. Roasting garlic, I love the flavors but not the pungent odor that can lodge into carpets, drapes and upholstery. Does the roasting process fill the house with that smell? Honestly I’ve never tried it, for that very reason. Also, for a healthier version, could you use EVOO instead of butter? I do add a smaller dollop of butter to my clam sauce to finish it and make it rich and shiny but the body of my sauce is EVOO and sometimes a bottle of clam juice added. I love the champagne idea. That will go into my sauce when I make it for our Italian Christmas Eve Feast of Seven Fishes. Lovely recipe. Thank you.

My god, that looks delicious. Such simple flavours yet so good. Now I'm starving for seafood. I always disposed of the ones that were open before cooking and didn't close with a quick tap, because those were potentially dead (and therefore potentially bad) too. Also, if anyone is worried about "irritating" them with semolina, flour, etc you don't have to. You're not irritating them, but encouraging them to have a quick snack, which then causes them to eject any sand that is inside them from previous feeds.

The night before, in a pail of cold water i add lots of oatmel.. The clams hate and spit out the sand.. I prefer to micro wave the clams and eat with melted butter..

Yeah, it doesn't so much irritate them as it encourages them to start filter feeding, and that, in the process, flushes out any remaining grit or sand that they've consumed in the process before being caught. As long as they think it's dinner time (for them) it'll work. :) If your shellfish is farmed, then hopefully it has less sand already, but it never hurts to give them a snack and encourage any lingering gritty stuff out before you cook them.

But you lose the delicious sea water in them … the clam diggers I see collect the clams from the sandy bottom then put them in floating baskets , thus the sand gets flushed

I used to live in NJ which would have been a short drive but I live in Idaho now. I'm really bummed about that. Can you use white wine in place of the champagne?

Yummy! You forgot to add that you should never eat any clams that have cracked/broken shells or that remain closed after steaming. Discard them as they are probably dead and full of bacteria.

Here in Maine, we call these Quahogs, or little necks, sometimes Cherry stones. "Clams" are soft-shells here. Looks delicious by the way! 😋
