Your camera work has gotten so good over the years. I've loved watching you cook and hearing your soothing voice (been subscribed for a longgg time), but the images throughout these videos have gotten so clear and beautiful. A recipe is not Spanish Style because of adding chorizo, in fact you will never see clams cooked with chorizo if you come to Spain.

+CologneCarter the title says Spanish Style, i can tell you how Spanish Style steamed clams are cooked, just fry some garlics in olive oil, then add the clams, let them open up and finally add finely choped parseley, you can also add at the begining some chili if you like it.

Do you mean Linguica? Chourico is really just the Portuguese word for Chorizo, and even if it's made in Portugal, it's really just a replicate of the classic style/recipe originating in Spain. Don't get me wrong though; I love Linguica, but both are very different. Linguica has a distinct anise flavor with coarser chunks of pork and is often milder (although I've seen spicy variations), while Spanish Chorizo is more garlicky, peppery, and spicier, while also a redder in color. (One thing to note: In Brazil, Linguica is the word used when referring to Chorizo; while Chourico is used when referring to Morcilla, which is a blood sausage known throughout the rest of Latin America.)

The next logical recipe to follow this...... Spanish paella! Dry Spanish chorizo is still difficult to find in supermarkets.... even in this day and age. World Market usually stocks a domestic brand (Danielle, Inc.), which isn't bad at all.... full of smoked paprika flavor. Probably the next best substitutes for Spanish chorizo would be the Portuguese Linguiça, a Kielbasa... or even a Louisiana Hot Link (I'm partial to Evergood). I've actually seen thin-sliced Spanish (or Spanish-style) chorizo in both Safeway and Lucky supermarkets (here in SF).... but those are meant for sandwiches and crostini/bruschetta.

Here in the UK dry Spanish chorizos are very popular. Much darker, harder than the one in the video, and, by the look of it, much stronger. I have a recipe a bit like this with mussels, but I have to shave the our kind of sausage much thinner, use less of it, too, not to overpower the shellfish.

Scientists are working on finding out why certain flavours go together. Last I heard they even had a likely hypothesis. Something about either very similar or very clashing taste chemicals.

Chef John, sorry to say but this isnt a Spanish dish, but a Portuguese dish. Its called "Ameijoas à Bolhão Pato" or translated to english, "Clams Bolhao Pato Style". And it doesnt take chouriço! But it looks delicis! Have to try it! thanks for the recipe.

Aleppo, while currently a city and province of Syria, is ethnically closer to Turkey and in fact much of the Aleppo province was taken by Turkey following WW1. So the pepper, now of Turkey, quite likely retains the name from its provincial origin of Aleppo.

With live clams should you soak them in a salt brine solution and let them spit out all the salt for at least 2 hours Chef. No matter how hard you clean the outside when it's still spitting out sand on the inside it's going to be a crap dish. Am I wrong or am I right chef?

Oh how I wish that I could get fresh clams. No such thing in rural Kentucky :-) I used to live in San Fran. I walked to the docks for fresh Seafood often. I would have never thought of this combo. Looks great! TY John :-)
