Just toss the vegetables and some turnip with the peas and at the end (20 min.) add a smoked sausage in slices and some celery leaves. That's how we eat it in Holland. But your version looks great to!

I used my leftover ham bone from Easter to make split pea soup with ham in the Instant Pot this week. I was able to get the flavor pretty close to the way my grandmother used to do it, but much faster!

I use leftover ham on the bone. We love it thick with lots of meat. I soak my bag and a half of peas the night before after thoroughly washing them until no more white scum comes off in the water. It really takes two days to make. The soup turns out thick, always add some chicken bouvril as well. If the soup is too salty I cut up one medium potato and it works great.The peas take a while to cook. Best soup ever with a Portuguese buns and black pepper!

I can appreciate so much how you added the veggies in later rather than earlier with the ham stock. Sometimes- and this is just me maybe, the veggies cooked low and slow in my broth meld so nicely and make exactly the flavour profile I want. But sometimes I want that veggie flavour IN the veggie and not drained out of the veggies themselves. Also- sometimes when I low n slow a broth, the veggies can get “tanny.” Is that even a word? Ham hocks. Mmmm - speaking our language here in Nashville Tennessee 👋

My favorite soup. In my country we cook it with lard cutlet and sausage and also add a chopped potato, this will change the structure of the soup very nicely. Rye bread on the side.

I make a very similar soup but instead of split peas I use red lentils, and also add chunks of potatoes instead of celery as I’m not a lover of that,my children use to love it, my daughter and I was only talking about it the other day and I said I must make it again. If she could take me to the shops so I can get the ham hocks to boil up as I’m disabled now and can’t get to the shops, so my daughter does my shopping for me. It’s so easy to make so I won’t have to stand for to long preparing it, just have to go and give it a stir every now and then, I boil every thing in the ham water once they are cooked and I’ve skimmed all the scum as I call it off of the water and once I’ve cut all the fat off the ham I chunk that up and put it back in pot with the veg, and simmer for a couple of hours.

It is hard to find ham hocks in my grocery store so I purchase a ham steak and use vegetable broth. Your soup looks delicious. I do not use the herbs you used. New recipe. Looks yummy, Amy. And you are a sweetie.

When I make dressing aka stuffing as it’s known in other parts, I use the the tops and hearts in my sauté of for the filling- and I started doing it because my family doesn’t like celery much and do not want to come across chunks. So over time I figured out that if I use the heart and tops- same flavour but it’s presence disappears once I let it simmer in my stock after softened in sauté butter. I then learned at some point in life, it was the most flavour- I laughed so hard at myself trying to keep celery down to a minimum for the family sensitivities, as we home cooks do, and yet I was making it more flavour 🤭 I ain’t telling them!

You’re absolutely correct about the celery tops. They contain 99% of the flavour and solid matter, the stalks are mostly water and fibre. I always retain and dehydrate the leaves. If you buy dried celery it’s always made from the leaves. The stalks are good for a little bit of flavour and a little bit of fibre but mostly used for the texture.

Amy, the way to avoid onions from affecting your eyes is by running both the onion and the knife down the water faucet for a few seconds right before chopping. It works for me.

Amy, you are just like me, you are cooking for many people with large ingredients in a 5Qt dutch oven...I don't think it's big enough...it's stressful watching wondering if it's going to boil over when simmering....Love the dishes, however, that's why I continue to watch!

WOW, I came home today with the ingredients for this today too. I make mixed bean soup at the same time, because it uses most the same base. I freeze portions. Canned soup is so bland compared to this. This soup is hardy enough for main the course.

This is a typical Dutch winter soup, we dont use to muche carrots, cos the taste its to sweet. we do also 2 or 3 patatoes in the soup and we put a smoked sauces in it from Unox.

I have been so disappointed in the ham hocks I have bought. I tried making navy bean soup last week and I could never get past the smell of hocks. Simmered them for a couple of hours til tender. HOWEVER. Nope couldn’t get past smell and into trash they went. Dang.
