alanporteous-oi2hx If you soak the yellow split peas covered in water overnight they will cook the next day faster. Yellow split peas are the best for split pea and ham soup, and ham stock made with a ham hock. Takes longer but worth it for flavour.

Split peas have a shelf life of about 1 year, after that they get very hard and can be almost impossible to soften completely. (you can liquidise but the soup will still have a slightly grainy texture). My advice is to use them quickly after purchasing and you will be alright.

alanporteous-oi2hx Salt may be your problem. Do not cook your peas in the ham stock. The salt will prevent them from ever becoming soft. Make your ham stock with just water. Cook your peas with the onion, celery and carrot, bay leaves and water. No salt. When peas are soft combine with the ham stock. Enjoy.
