Once you get familiar with your pantry, utensils, stove, fridge, freezer and general kitchen you will start to see food prep “in the future…” What can we do with ALL of this BLANK stuff: Meat, Veggies, Starch, whatever!? So, I do a mixed grill knowing some of that meat is intended for other meals. Teriyaki Chicken, I knew we would be using that for something other than eating right off the grill: Quesadillas. NOW, I didn’t have the correct tortillas in the house. I didn’t have any Crema / Sour Cream. So I made up my menu, looked at what I had on-hand, and the stuff I needed I picked up from the store, last night, after dinner.
GASP, you left the house AT DARK to go to the GROCERY store AT NIGHT!?!? Come-on people, you really need to get over ideas on when / how you go to the store. Yes, I did, and now I have all I need to prepare tonights meal. Should be a good one!
TIME TO PREPARE
10 minutes to trim chicken
5 minutes to prepare
1-2 minute per side, twice
3 minutes to rest
INGREDIENTS FOR CHICKEN QUESADILLA
Grilled Chicken
Tortillas
Cheese
Crema / Sour Cream
Salsa
Hot Sauce
Chips
Spray Oil
HOW TO
1. Get your Cast Iron heated up, medium heat
2. Cut your skinless / boneless chicken thighs from the other night and cut them up REALLY small
3. Layout your tortillas
4. Spray the inside of the tortilla with Spray Oil
5. Add chicken and cheese
6. Take another tortilla and cover chicken / cheese
7. Press together
8. Spray Cast Iron with Spray Oil
9. Add filled tortilla, cook for 5 minutes
10. Flip
11. Cook other side for 5 minutes
12. Flip
13. Do it again, 2 more times
14. Take it off heat, let rest for a couple minutes, then cut into quarters
15. Enjoy
