Steam Arbi Ke Patte Ke Pakode (Steamed Taro Leaf Fritters)
Ingredients:
1 lb taro leaves (arbi ke patte), washed and patted dry
1 cup chickpea flour (besan)
1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp carom seeds (ajwain)
1 tsp salt
Water as needed
Oil for frying (optional)
Instructions:
Wash the taro leaves thoroughly and pat them dry with a clean kitchen towel.
In a mixing bowl, combine the chickpea flour, red chili powder, cumin powder, coriander powder, carom seeds, and salt. Mix well.
Gradually add water to the flour mixture and knead to make a smooth, lump-free batter. The consistency should be thick enough to coat the taro leaves.
Take a taro leaf and dip it into the batter, making sure it's evenly coated on both sides.
Arrange the battered taro leaves in a steamer basket, making sure they don't overlap.
Steam the taro leaves for 10-12 minutes, or until they are tender and the batter is cooked through.
Remove the steamed taro leaf pakoras from the steamer and let them cool slightly.
(Optional) You can lightly fry the steamed pakoras in hot oil for a few seconds to make them crispy, if desired.
Serve the steam arbi ke patte ke pakode hot, garnished with chopped cilantro or mint leaves. Enjoy with your favorite chutney or dipping sauce.
