Duroc ribs are widely used by BBQ competition teams and prized for their extensive intramuscular marbling. But are they really worth it? In this video Steve from @SmokeTrailsBBQ compares a rack of Compart Duroc Ribs to a rack of ribs from Costco to see if Duroc ribs are really worth the hype.
Long Hold Ribs Recipe
PREP TIME: 1 hr COOK TIME: 24 hrs
INGREDIENTS
● Ribs
● Your favorite rub
● Your favorite BBQ sauce
● Butter or clarified butter (Ghee) (1 cup)
THE COOK (24 hrs)
● Remove membrane from back of ribs and season with your favorite rub
● Smoke ribs at 225 degrees until they reach 145 degrees internal (around 2-3 hours)
● Wrap ribs in foil with clarified butter or regular butter and hold at 150 degrees for 18 hours
● The next day, unwrap the ribs and sear them until the top of the ribs sizzle and smell like bacon
● Sauce the ribs and smoke them at 225-250 until the sauce sets up and becomes tacky, approx. 1 hr.
● Slice and serve
