Recipe & Ingredients
5 Chicken Full Leg and Thigh pieces
1/2 kg Yogurt
1 Teaspoon Corriander seeds
1 Teaspoon cumin seeds
1 Teaspoon Chili flakes
1 Teaspoon Red Chili Flakes
1/2 Teaspoon black pepper
1/2 Teaspoon white pepper
1/2 Teaspoon Aamchoor Powder
1 small Piece Jaefl (Nutmeg)
1 small Piece Javitri (Mace)
1 small Piece Cinnamon
4-5 Green cardamom
1 Black cardamom
3-4 Cloves
1 small Piece Star anise (Badian-e-khatai.)
8-10 Green Chillies Sliced
Tawa Chicken Masala Homemade:
Grind and mix the following spices 1 Teaspoon Corriander seeds, 1 Teaspoon cumin seeds, 1 Teaspoon Chili flakes, 1 Teaspoon Red Chili Flakes, 1/2 Teaspoon black pepper, 1/2 Teaspoon white pepper, 1/2 Teaspoon Aamchoor Powder, 1 small Piece Jaefl (Nutmeg) , 1 small Piece Javitri (Mace), 1 small Piece Cinnamon, 4-5 Green cardamom, 1 Black cardamom, 3-4 Cloves and 1 small Piece Star anise (Badian-e-khatai.) Mix these well and your tawa masala is ready.
Recipe;
Let chicken sit in salt water and vinegar for 2 hours. After that add your masala which will be roughly 3 TBSP in half kg yogurt. Take 6-7 TBSP of yogurt and marinate chicken in this masala for at-least 2 hours and also add 2 TBSP ginger / garlic paste in it.
Then cook your chicken in a pan for 2-3 minutes on each side.
After that take a tawa and add oil onto it. Fry already cooked chicken for 5-6 minutes and then add 1/2 of the left yogurt masala in it and cook for another 5 minutes at medium flame. Then after 5 minutes add the rest of the yogurt masala and add all the green chillies. Cook chicken for another 10 minutes until spices and cooked properly and water from yogurt evaporates.
Finally your tawa chicken is ready to be served either with rumali roti or naan. Do not forget to put some lemon on top and enjoy!
