ARMENIAN ONION SOUP

Instructions:
1. In a large pot, heat the olive oil over medium heat.
2. Add the cubed onions and colorful peppers, stir to coat them in the oil, and let them cook for 15 minutes, stirring occasionally.
3. Add the cooked beef to the pot.
4. Add the tomatoes and reduce the heat to low and let them cook for another 30 minutes in their own liquid.
5. Add the tomato paste, paprika, and bay leaves to the pot and stir to combine.
6. Reduce the heat to low and let the soup cook for another 30 minutes in its own liquid.
7. Season the soup with salt and pepper to taste.
8. Pour in the beef broth or add boiling water and stir to combine.
9. Bring the soup to a simmer and let it cook for an additional 20-30 minutes to allow the flavors to meld together.
10. Add the chopped fresh parsley and turn off the heat.
11. Ladle the soup into bowls and serve with a slice of crusty bread.
