Authentic Punjabi Paneer Paratha Making :
Paratha Dough Making Ingredients :
2 Cups Wheat Chapati Flour
1/2 Cup All Purpose Flour
1 Tsp Salt
1 + 1 1/2 Tbsp Oil
1 1/4 Cup Water
Method Of Making Paratha Dough :
1. Mix well flours, 1 tbsp oil and salt.
2. Add water and form dough.
3. 1 1/2 tbsp oil adding little at a time and knead dough for 10 minutes total.
4. Let the dough rest at least 20 minutes.
Paratha Stuffing Making Ingredients :
1/2 Tbsp Pepper Corn
1 Tbsp Coriander Seeds
1/2 Tbsp Dry Mint
1 Kashmiri Red Chili
250 Grams Paneer
Red Chili Powder To Taste
1 Pinch Carom Seeds
1 Cup Finely Diced Onions
1/2+1/2 Tbsp Chat Masala
1/2 Tsp Roasted Cumin(Jeera) Powder
1/4 Tbsp Coriander Powder
Salt To Taste
1 Green Chili Chopped
1 Cup Coriander Leaves Chopped
Oil For Frying Paratha
Method Of Making Stuffing :
1. Grind coarse pepper corn, coriander seeds, dry mint and Kashmiri red chili.
2. Grate paneer and add ground masala. Also, add rest of the ingredients and combine well.
Method Of Rolling And Frying Paratha :
1. Take equal size of dough and filling. Make a disk of the dough and put stuffing on it. Close the dough and make seamless ball. This dough and stuffing will make 7-8 balls.
2. Using rice flour dusting, roll gently 1/4" thick paratha.
3. Heat a flat pan on medium to high flame.
4. Cook paratha 1 minute on each side before adding oil.
5. Add 1/2 tsp oil on each sides and fry until golden on both sides.
6. Serve paratha pipping hot with butter and pickle.
Perfectly bubbly, crispy, and super delicious paratha is ready to indulge.
