I have been asked by quite a few fans of the Char-Griller Akorn Kamado to do a run of baby back ribs, so today I finally got around to that as part of my Labor Day weekend cook for a crowd at the house. Notes about this cook:
I started out with the grill temp somewhere between 250-275°. I cooked the ribs unfoiled for 90 minutes. I then wrapped the ribs and added some pineapple juice inside the foil and put them back on for another 45 minutes at the same temperature range. I then unwrapped the ribs, put them back on the grill, sauced them and let that sauce glaze for another 45 minutes or so... these ribs were excellent!
