Malabar spinach bajji
Bachali aaku bajji or Malabar spinach pakodas are teatime snack and side dish for lunch. Indian gramflour fritters and pakoras are super easy to make in 15mints
Ingredients:
10 or 8 Bachali Aakulu/Malabar Spinach
1/2 cup shanigapindi/Gram Flour/Besan
1 tbsp Rice Flour/Biyampindi
1/4 tsp Carom Seeds/Vamu
1 2 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
1/2 Corriender powder
Salt as required
Water for bajji batter
Oil for deep fry
Instructions:
1.Wash Bachali Aakulu / malabar spinach leaves well and drain them.
2.Mix all the ingredients( gramflour, rice flour,chilly powder,turmeric,corriender powder, salt, carrom seeds,water.as shown in the video) in a bowl mix very well. Add water as required to make a medium consistency baajji/ pakoda batter.
3.Next pour 1spoon hotoil to the batter and mix well and kept aside.
4.Heat oil in a kadai dip each leaf in the batter and fry till golden drain them on kitchen paper towels to remove extra oil.
5.serve hot with mint chutney or tomato 🍅ketchup
Note:
1.Bachali Akulu/Malabar spinach pakora batter consistency is medium thick. Do not make a thin or runny lightlythick batter. A thin batter will absorb too much oil. If the batter becomes thin add a few tablespoons of gram flour.
2.Use always fresh Bachali Akulu for best results.
