Nice job pop that's a good look,soak your wood chips in water overnight,when it's time to place them try putting them a little lower on the coals remember wet wood won't burn as fast it will smoke twice as long as dry.Also try putting large binder clips-3 around the lid to lock in smoke and control heat better wet wood trust your boy cuz.

My dad was the bbq king of the family. He had cancer that spread to his spinal cord. He was unable to walk, but he was determined to cook ribs for us one last time, so he did it while sitting in his wheelchair. I'm so glad you are doing better and pray that you will be able to grill again.

Try your favorite seasoning salt and mix it with some coconut sugar. The sugar won’t burn fast but will add an awesome color to the ribs. You can find the sugar at any grocer.

Dang, really educational Eric. Nice looking food there. Question if you don’t mind. Do you find when wrapping with the usual ingredients do you find it washes the smoke flavor out? It was fun seeing you on tv in bbq pit wars.

Yes, I agree that wrapping with foil tends to steam away alot of the smoke. I'm a big fan of wrapping with butcher paper now. You maintain that smoke flavor. Thanks for watching!

Yes Bottom vents were wide open. I controlled the heat flow with the top vent.
