Today I am going to make Badami Malai Kulfi without condensed milk, khoya and cream with just 3 ingredients.
Badami Malai kulfi, a beloved Indian frozen dessert, is traditionally made with a combination of thickened milk, khoya (reduced milk solids), sugar, and flavorings like cardamom, saffron, or pistachios. However, if you're looking to make a version without khoya and condensed milk, you can achieve a creamy texture and rich flavor through a slightly different method.
To begin, you'll need whole milk, boiled milk cream, sugar, and your choice of flavorings. Start by heating the whole milk in a heavy-bottomed saucepan over medium heat. Allow the mixture to come to a gentle simmer, stirring occasionally to prevent scorching.
Once the milk has reduced slightly and thickened, add sugar according to your taste preferences into a pan and caramelise it on low flame. Once the suger has caramelized, add it into the milk and continue to simmer the mixture until it further reduces and thickens to a custard-like consistency. This process may take anywhere from 30 minutes to an hour, depending on the quantity of liquid and the desired thickness. And now add bread crumbs into the milk and sugar's mixture
While the mixture is simmering, you can add flavorings such as cardamom powder, or crushed nuts for a delightful aroma and taste.
Once the mixture has reached the desired thickness and flavor, remove it from the heat and allow it to cool slightly. Then, pour it into kulfi molds or small individual containers. Insert popsicle sticks or wooden skewers into the center of each mold or container.
Place the kulfi molds or containers in the freezer and let them freeze for at least 6 hours or overnight until completely set.
When ready to serve, remove the kulfi from the molds by running them under warm water for a few seconds to loosen. Serve the malai kulfi on a plate or in a bowl, garnished with additional nuts or a sprinkle of saffron, if desired.
