Bake your own sourdough at home!
The recipe I use is:
In a large mixing bowl, add
350 grams warm water (Filtered is probably better but I use tap, so you do you.)
10g fine grained salt
- stir the salt into the water until fully dissolved -
then to the water/salt mixture add:
100-115g active starter & stir (break up the starter into smaller pieces so it's more easily incorporated into the dough)
Add flour directly to the bowl
400g bread flour (bread flour has higher gluten count and is THE flour to use)
100g whole wheat or white whole wheat flour
Stir the mixture until all the dry ingredients are incorporated into the dough.
I recommend using a dough hook / Danish dough hook for this step.
knead & proof dough at 45-60 min intervals 2-3 times
Proof, covered on countertop for 7-8 hrs or until dough ball has doubled in size
stretch and shape dough into loaf and flour, place in floured cloth lined banneton/bowl
Cover and cold proof in refrigerator overnight
Next morning
Preaheat oven and dutch oven to 490'
Place cold proved dough on parchment paper, scoring top
Remove lid, place scored dough in dutch oven along with 2-3 ice cubes, replace lid and close oven.
Bake at 490 for 20 minutes.
After 15 minutes,
Remove lid and reduce oven temp to 450'
Bake at 450 for 25 minutes.
Remove from oven and allow to cool on baking rack for 45-60 minutes.
Enjoy w/topping of your choice
